Come down to the Manitou Springs Colorado Wine Festival

and stay with one of the Authentic Inns at night!

Come join us Saturday, June 2, 2012, in Memorial Park.

This year there are 25 different wineries giving out samples of their work. If there are ones you can’t live without than the wineries will have bottles for purchase.

Be prepared for fun all day long! Gates open at 11 am. Live entertainment begins at 12 pm.

There is a wristband system in place. If you do not have a wristband, then you will not be given any wine.

There will be specialty food and wine-related gift vendors throughout the park. Tastings from all of the wineries will be available to those with the wristbands.

Admission is $30. There is a $5 military, fire, police, and first responders discount. Designated drivers and those that do not want to participate in tastings get in free.

Gates close at 5 pm and the Festival ends at 6pm.

Authentic Bed & Breakfast Inns & Cottages of the Pikes Peak Region will join hundreds of inns and B&Bs throughout the U.S. and Canada in honoring active and retired veterans with free rooms in recognition of Veteran's day. In a campaign called B&Bs for Vets, Authentic Inns & Cottages will join inns and B&Bs in opening their doors with complimentary stays for vets on November 10, 2011 so they can wake up on Veteran's Day, 11-11-11, to a wonderful breakfast after a great nights sleep in a B&B. A thank you from Innkeepers for those serving in the military and their families for the important work they do.

The nine member inns of the Authentic Bed & Breakfast Inns & Cottages of the Pikes Peak Region will each offer at least one room free with a buy one get one night free offer. Hearty Apple Muffins

Adapted from Smitten Kitchen's Whole Wheat Apple Muffins (which she adapted from King Arthur Flour)
Yield: 12
1 cup all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/2 cup (1 stick, 4 ounces) unsalted butter, at room temperature
1/2 cup (3 1/2 ounces) granulated sugar
1/2 cup dark brown sugar, packed, divided
1 large egg, lightly beaten
1 cup (8 ounces) buttermilk or yogurt (I used 6 ounces Greek yogurt and a splash of milk)
2 large apples, peeled, cored, and coarsely chopped (I used 2.5 smaller apples and left on the skin)

Preheat the oven to 400°F. Grease and flour 12muffin cups and set aside.

Mix together the flours, baking powder, baking soda, salt, and cinnamon, and set aside. In a separate bowl, cream the butter and add the granulated sugar and 1/4 cup of the brown sugar. Beat until fluffy. Add the egg and mix well; stop once to scrape the sides and bottom of the bowl.Mix in the buttermilk gently. (If you over-mix, the buttermilk will cause the mixture to curdle.) Stir in the dry ingredients and fold in the apple chunks.

Divide the batter evenly among the prepared muffin cups, sprinkling the remaining 1/4 cup brown sugar on top. Bake for 10 minutes, turn the heat down to 375°F, and bake for an additional 5 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.

Authentic Inns and Cottages of the Pikes Peak Region

thought you may want to try a fun "green" recipes for the upcoming St. Patrick's Day!

"Green Puffs"

A light and fun dessert or snack with a little bit of green flair.

Who says green food can't be pretty? It's no ordinary "Cream Puff"!

For the Filling

1 small package of Pistachio pudding
1 container of ready whipped topping or whip 2 cups heavy whipping cream

Mix the two ingredients together and refrigerate until filling is needed.

For the Cream Puffs

1 cup water
6 tablespoons unsalted butter
1 teaspoon sugar
1/4 teaspoon fine salt
1 cup all-purpose flour
4 large eggs
1 egg yolk

Directions

Combine the water, butter, sugar, and salt in a medium sauce pan. Bring to a boil over medium heat. Remove the pan from the heat and add the flour directly into the pan. Stir the mixture into a paste Return the pan to a medium heat. Stir the mixture until it pulls away from the sides of the pan and is slightly shiny, about 3 minutes.

Transfer the paste to a medium bowl, and beat with a wooden spoon until slightly cooled, about 2 to 3 minutes. Add the eggs, one at a time, incorporating each one before adding the next. Before adding the last egg, beat it in a small bowl. Adding it by tablespoons to the mixture, just until the batter is smooth and tight.

Preheat to 400 degrees and place oven rack in the middle shelf. Line a baking sheet with parchment paper. Use a large spoon to form the dough into the mounds. Smooth the tops of each puff with a fingertip dipped in water. Beat the egg yolk with a tablespoon of water and brush the surface of the puffs with the beaten yolk.

Bake in the middle of the oven for 15 minutes. Reduce the oven temperature to 350 degrees; continue baking until golden brown and the puffs are light, and airy about 30 to 35 minutes more. Cool completely on a rack.

Cut the the puffs in half and remove the top and set the tops aside. Put a heaping tablespoon of the pistachio pudding mix in the bottom half of the cream puffs. Replace the top. Serve immediately or refrigerate for up to 3 hours.

The puffs can be made a head of time and frozen for use at a later date.

Here is a sample of a recipe in the cookbook:

EGGS AU GRATIN

1/4 cup butter
1/3 cup all purpose flour
3/4 tsp. salt
1/4 tsp. pepper
2 cups water
1 cup milk
2 chicken bullion cubes
1/2 tsp. Worcestershire sauce
1 cup shredded cheddar cheese
12 hard cooked eggs
1/3 cup dry bread crumbs
2 Tbsp. butter
1/3 - 1/2 cup Parmesan cheese

Heat 1/4 cup butter in saucepan until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.

Stir in water, milk and bullion cubes. Add Worcestershire sauce and cheddar cheese and stir until cheese is melted.

Cut peeled eggs lengthwise into halves. Arrange eggs in ungreased oblong 13"x9" baking dish. Pour cheese sauce over eggs. Toss bread crumbs with 2 Tablespoons butter and Parmesan cheese; sprinkle over top.

Cook uncovered in 350 degree oven until mixture bubbles and crumbs are brown, 20 - 25 minutes.

Serves 8.

Haiti Relief Fundraiser

HAITI RELIEF FUNDRAISER

Innkeepers at Authentic Bed and Breakfast Inns and Cottages of Pikes Peak will hold two fundraising weekends to help benefit with Haiti relief.

All innkeepers in our Colorado Bed and Breakfast association will donate 10% of our proceeds the 1st two weekends of March to the Red Cross to help benefit the earthquake victims in Haiti.

MANITOU SPRINGS FRUITCAKE TOSS

Ever wonder what to do with those leftover fruitcakes that your favorite relative or employer gives you for Christmas? Here's the perfect way to get rid of them while having some fun.

Manitou Springs hosts an annual event every January called the Great Fruitcake Toss. You can bring your own fruitcakes, or buy one for $1.00. Then you can participate in one of the many categories whether you want to hurl them through the air with brute force of muscle, build an elaborate trebuchet, gun or canon. It's loads of fun!

The 15th Annual Manitou Springs Fruitcake Toss will be held on Saturday, January 9, 2010. Festivities begin at 10:00am at the Manitou Springs High School Track 401 El Monte Place.

There is a wealth of activity to do in the Pikes Peak Region. One of the most popular attractions is the Pikes Peak Cog Railway.

Pikes Peak is one of Colorado's most famous mountains, where the song "America the Beautiful", was inspired from. Pikes Peak is at an elevation of 14,110 feet and one of the most accessible mountain peaks in the state of Colorado.

The Manitou & Pikes Peak Railway Company was founded in 1889 and the first trains made their way to the top of Pikes Peak in 1891.

Today, hundreds of people board the train daily and make the summit to Pikes Peak. It's one of the "don't miss while you're here" activities to do. At the top you can see 360 degrees for hundreds of miles in all directions. On a clear day you can see into 4 states.

The Inn at Cascade "A Southwestern Retreat in the Colorado Rockies" is a southwestern style bed and breakfast inn located in the scenic mountain community of Cascade, Colorado just west of Colorado Springs and Manitou Springs. You'll awake each morning to a memorable full gourmet breakfast featuring southwestern signature specialties such as Chile Relleno Pie with Chipotle Roasted Potatoes or Blue Corn Banana Pancakes drizzled with Prickly Pear Syrup and served with a side of Maple Spiced Sweet Potatoes. Traditional signature recipes include guest favorites such as Potato and Herb Egg Bake served with a Squash medley or Stuffed French Toast topped with Caramelized Apples and Caramel Sauce. Perched on the hill, nestled off the street with an expansive front lawn and garden, the Avenue Hotel B&B is uniquely located on Manitou Avenue in the heart of the city, local shops restaurants and galleries are all within a short walk.

Andy & Pat’s Our Hearts Inn Old Colorado City is located in Historic Old Colorado City in a nice mix of residential and commercial properties. Tree lined streets lead to the Historic Shopping & Dinner area of Old Colorado City. Walk to and from in the shadow of Pikes Peak Mountain.

Enjoy the beautiful gardens Pat lovingly tends spring through fall. Two rooms include an outdoor balcony each overlooking the side garden or back garden areas. Viewing the Front Range Mountains are a Colorado Bonus.

Three Victorian Country rooms with custom hand stenciling are available in the main property of the bed and breakfast. Private baths, fireplaces, TV’s, coffee pots and more are included. The adjoining hallway includes a guest refrigerator and micro wave. Two rooms provide the private balconies as well. A separate cottage is located In Old Colorado City perfect for 2 (3 with small child). This second larger cottage is perfect for 2-6 (with small child) in a two story house providing a King, Queen, Twin beds. Air conditioning, electric fireplace; second story private balcony and front porch with Mountain Views ensure your comfortable and enjoyable stay. Cottage on the Knob’s historic property’s location is Mennonite with large wonderful windows throughout the structure. Walk to shops & dinning and near several area hiking trails.

Both properties are located near all major attractions with just minutes to the Garden of the Gods, Cheyenne Mountain Zoo, Cave of the Winds, Cliff Dwellings as well as a short drive to the Air Force Academy and the many other wonderful and some “free” Pikes Peak Area’s best attractions of the State of Colorado.

Andy & Pat felt their “hearts” where left in Colorado when 1st visiting from Illinois. Expressing that emotion, they soon opened “Our Hearts Inn” so that all visitors have a place to leave a bit of their Heart too!

America's Rocky Mountain Lodge & Cabins also offers the Lodge as a vacation home rental where you can rent the entire Lodge exclusively for a family reunion, wedding, retreat, or corporate event. The Lodge has beds to sleep up to 17 people and can host up to 30 people.
