Colorado Bed and Breakfast Cookbook, Simply Authentic Cuisine

Our 2nd version of our Colorado Bed and Breakfast cookbook, Simply Authentic Cuisine, Volume 2, has been published!

The cookbook contains 100 recipes from 10 Bed and Breakfast Inns throughout the Pikes Peak Region. Try the recipes you would enjoy while staying in our Manitou Springs, Cascade, Woodland Park Bed and Colorado Springs Breakfast Inns.

Here is a sample of a recipe in the cookbook:


EGGS AU GRATIN
  • 1/4 cup butter
  • 1/3 cup all purpose flour
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups water
  • 1 cup milk
  • 2 chicken bullion cubes
  • 1/2 tsp. Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 12 hard cooked eggs
  • 1/3 cup dry bread crumbs
  • 2 Tbsp. butter
  • 1/3 - 1/2 cup Parmesan cheese
Heat 1/4 cup butter in saucepan until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.

Stir in water, milk and bullion cubes. Add Worcestershire sauce and cheddar cheese and stir until cheese is melted.

Cut peeled eggs lengthwise into halves. Arrange eggs in ungreased oblong 13"x9" baking dish. Pour cheese sauce over eggs. Toss bread crumbs with 2 Tablespoons butter and Parmesan cheese; sprinkle over top.

Cook uncovered in 350 degree oven until mixture bubbles and crumbs are brown, 20 - 25 minutes.

Serves 8.

Haiti Relief Fundraiser

HAITI RELIEF FUNDRAISER

Innkeepers at Authentic Bed and Breakfast Inns and Cottages of Pikes Peak will hold two fundraising weekends to help benefit with Haiti relief.

All innkeepers in our Colorado Bed and Breakfast association will donate 10% of our proceeds the 1st two weekends of March to the Red Cross to help benefit the earthquake victims in Haiti.

Manitou Springs Fruitcake Toss

MANITOU SPRINGS FRUITCAKE TOSS


Ever wonder what to do with those leftover fruitcakes that your favorite relative or employer gives you for Christmas? Here's the perfect way to get rid of them while having some fun.

Manitou Springs hosts an annual event every January called the Great Fruitcake Toss. You can bring your own fruitcakes, or buy one for $1.00. Then you can participate in one of the many categories whether you want to hurl them through the air with brute force of muscle, build an elaborate trebuchet, gun or canon. It's loads of fun!

The 15th Annual Manitou Springs Fruitcake Toss will be held on Saturday, January 9, 2010. Festivities begin at 10:00am at the Manitou Springs High School Track 401 El Monte Place.

Pikes Peak Cog Railway

There is a wealth of activity to do in the Pikes Peak Region. One of the most popular attractions is the Pikes Peak Cog Railway.

Pikes Peak is one of Colorado's most famous mountains, where the song "America the Beautiful", was inspired from. Pikes Peak is at an elevation of 14,110 feet and one of the most accessible mountain peaks in the state of Colorado.

The Manitou & Pikes Peak Railway Company was founded in 1889 and the first trains made their way to the top of Pikes Peak in 1891.

Today, hundreds of people board the train daily and make the summit to Pikes Peak. It's one of the "don't miss while you're here" activities to do. At the top you can see 360 degrees for hundreds of miles in all directions. On a clear day you can see into 4 states.
