Hughes Hacienda spices up the morning with "Breakfast Rellenos"

Hughes Hacienda Breakfast Rellenos
Directions: Place chiles on foil-covered cookie sheet. Place 4-6 inches below the broiler unit. Roast chiles for 6-8 minutes, rotating occasionally, until lightly charred and uniformly blistered. Remove frm the broiler and place in a plastic bag and close tightly. Steam for 5 minutes. Remove from bag and wash under cold water to remove the skin. Leave the stems on. Make a slit lengthwise in the chile and remove the seeds. Pat dry with paper towel and place on an oven-proof plate, slit side up. Roast piƱon nuts and raisins. Spoon egg mixture into the prepared chiles.  Spoon sour cream over eggs and sprinkle cheese on top. Place under the broiler until cheese melts. Place on serving dish and garnish with avocado slices. S'more Pie

 Here is a fun and easy summer recipe from Cascade Escapes.  As  a member inn of the Authentic Bed and Breakfast Inns & Cottages of the Pikes Peak Region, collecting and having a variety of special recipes is part of innkeeping. Check out our cookbook for sale  Simply Authentic Cuise 2.



Ingredients:
-4 bars (1.55 ounces each) milk chocolate, divided
-1 (6 ounces) prepared graham cracker pie crust (can be made with 2 cups graham crumbs and 6 tablespoons melted butter. Press in pie dish.)
-1 pint (2 cups) gourmet-style heavy whipping cream
-1 container (7 ounces) marshmallow cream

Directions:
1) Break 1 chocolate bar into pieces at markings to use later for garnist. With large holes of box grater, peel chocolate and set aside.
2) Breaking remaing 2 chocolate bars into small pieces into small microwave-safe cup; heat in microwave oven on high 45 seconds of until melted. Spread melted chocolate with spatula to evenly cover bottom and sides of crust.
3) In large mixing bowl, beat cream on medium speed until still peaks form. Fold marshmallow into cream just until combined. Add grate chocolate and fold into marshmallow mixture just until combined. Spoon into pie crust, sprinkle with reserved chocolate pieces. Cover pie and refrigerate at least 2 hours or up to 1 day before serving.

Prep: 15 minutes plus chilling.
Serves 8

The Manitou Springs Colorado Wine Festival



Come down to the Manitou Springs Colorado Wine Festival 
and stay with one of the Authentic Inns at night! 

Come join us Saturday, June 2, 2012, in Memorial Park.  

This year there are 25 different wineries giving out samples of their work.  If there are ones you can’t live without than the wineries will have bottles for purchase.

Be prepared for fun all day long! Gates open at 11 am. Live entertainment begins at 12 pm.

There is a wristband system in place. If you do not have a wristband, then you will not be given any wine.
There will be specialty food and wine-related gift vendors throughout the park. Tastings from all of the wineries will be available to those with the wristbands.

Admission is $30. There is a $5 military, fire, police, and first responders discount. Designated drivers and those that do not want to participate in tastings get in free.

Gates close at 5 pm and the Festival ends at 6pm.

Make a weekend of it! Come have fun during the day at the Wine Festival and stay with us at night. It is the perfect stay-cation!
